Apple Pie is Gone

you will see a picture from our house warming party. We tried to satisfy our quests with our national meals and aperitifs. We served Polish vodka, Estonian blood sausage, different salads, cucumbers, cabbage and mushrooms a la Eastern Europe and …. But The absolute number one was apple pie (in Polish SZARLOTKA). I’ve made it according to the recipe my mum usually uses. Many people asked me for a recipe after that so here it goes:
WE NEED:
3 eggs (yolks only)
1 glass of wheat flour
1 glass of sugar
1 tea spoon of baking powder
50g of vanilla sugar
250g of margarine
1kg of apple
0.5 teaspoon of cinnamon
PREPARATION:
Peel the apples and grate them or cut them into tiny tiny parts.
Cut the margarine into the flour with knife until it will get well mixed. Add sugar, vanilla sugar, yolks (only) and form dough. Cut it into two halves. Use the first half as a bottom part which holds the apples. Put the apples in it. Spread cinnamon over it. Roll the second half adequately and cover the apples. Stick the edges together.
Smear the baking form with margarine and put the dough into a hot oven (around 160C) and bake for about 45 minutes until it gets this lovely brownish colour and crunchy structure.
I used almost only Australian made ingredient besides baking powder and vanilla sugar which I bought in Polish shop called Tatra in Parramatta. After I brought this cake to the room it was gone within minutes : ) I will bake another one for my birthday.
